Jack Daniel's

Jack Daniel's is a brand of Tennessee whiskey that is among the world's best-selling liquors and is known for its square bottles and black label.

It is produced in Lynchburg, Tennessee by Jack Daniel Distillery, which has been owned by the Brown-Forman Corporation since 1956. Despite the operational distillery, Jack Daniel's home county of Moore is a dry county.

According to the Jack Daniel's website, founder Jasper Newton "Jack" Daniel was born in September 1850, although seemingly no one knows the exact date because the birth records were destroyed in a courthouse fire.

If the 1850 date is correct, he might have become a licensed distiller at the age of 16, as the distillery claims a founding date of 1866. Other records list his birth date as September 5, 1846, and in his 2004 biography Blood & Whiskey: The Life and Times of Jack Daniel author Peter Krass maintains that land and deed records show that the distillery was actually not founded until 1875.

Daniel was one of thirteen children to Calaway Daniel and his mother Lucinda Cook. Jack Daniel's grandfather, Joseph "Job" Daniel emigrated from England as did his Scottish wife to the United States. He was of Scots-Irish and Scottish descent.

Jack died in 1911 from blood poisoning which started from an infection. The infection allegedly began in one of his toes, which Daniel injured one early morning at work by kicking his safe in anger when he could not get it open (he was said to always have had trouble remembering the combination).

Because Jack Daniel never married and did not have any children, he took his favorite nephew, Lem Motlow, under his wing. Lem was very skilled with numbers, and was soon doing all of the distillery's bookkeeping.

In 1907, due to failing health, Jack Daniel gave the distillery to his nephew. Lem Motlow then gave the distillery to his children, Robert, Reagor, Dan, Conner, and Mary, after his death in 1947.

Madeira wine

Madeira is a fortified Portuguese wine made in the Madeira Islands. The wine is produced in a variety of styles ranging from dry wines which can be consumed on their own as an aperitif, to sweet wines more usually consumed with dessert.

Cheaper versions are often flavored with salt and pepper for use in cooking. The islands of Madeira have a long winemaking history dating back to the Age of Exploration when Madeira was a standard port of call for ships heading to the New World or East Indies.

To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavor of the wine as the wine producers of Madeira found out when an unsold shipment of wine returned to the islands after a round trip.

Today, Madeira is noted for its unique winemaking process which involves heating the wine up to temperatures as high as 60°C (140°F) for an extended period of time and deliberately exposing the wine to some levels of oxidation.

Due to this unique process, Madeira is a very robust wine that can be quite long lived even after being opened. Most countries limit the use of the term Madeira or Madère to only those wines that come from the Madeira Islands.

In Europe, this principle is enshrined in the European Union by Protected Designation of Origin (PDO) status.

Vin jaune

Vin jaune (French for "yellow wine") is a special and characteristic type of white wine made in the Jura wine region in eastern France. It is similar to dry fino Sherry and gets its character from being matured in a barrel under a film of yeast, known as the voile, on the wine's surface.

Vin jaune shares many similarities with Sherry, including some aromas, but unlike Sherry, it is not a fortified wine. The wine is made from the Savagnin grape, with some of the most premium examples coming from the marl based vineyards in the Château-Chalon AOC.

In other French wine regions, there has been experimentation in producing similar style wines from Chardonnay and other local grape varieties using cultured yeast such as the vin de voile wine produced in the Gaillac.

Vin jaune is made from late harvest Savagnin grapes, a white variety in the Traminer family which is less aromatic than the better-known Gewürztraminer.

The grapes are usually harvested in late October when the sugars have developed enough to have a potential alcohol level of 13–15% for the finished wine.

The grapes are fermented slowly and then kept in small old oak casks that hold 228 liters (60 gallons). The casks are not topped up, as they are with most wines, so an air gap appears above the wine due to evaporation.

A film of yeast grows over the wine, protecting it partially (but not totally) from oxidation. In Jura, this film is called the voile (veil), but it is similar to the more familiar "flor" in Sherry production.

The voile yeast has many similar properties to "flor" but thrives better in a lower alcohol environment and develops less heavily and thickly than "flor" does. Producers in the Jura include André & Mireille Tissot, Gaspard Feuillet, Chateau Béthanie, Domaine Berthet-Bondet, Frédéric Lornet and Henri Maire.

The voile typically takes two to three years to develop fully. During this time the wine is exposed to slight levels of oxidation that provoke chemical changes that produce ethanal (as well as ethanol, standard alcohol) and the aroma compound of sotolon.

These compounds contribute to the unique flavors and aromas associated with vin jaune. Winemakers must carefully observe the wine throughout the aging process as there is a risk of it developing the wine fault of volatile acidity.

Shirazi wine

Shirazi wine was the wine produced around the city of Shiraz in Persia. Already by the 9th century, the city of Shiraz had established a reputation for producing the finest wine of the Middle East, and was Persia's wine capital.

The export of Shirazi wine to India by European merchants in the 17th century has been documented. As described by enthusiastic English and French travellers to the region in the 17th to 19th centuries, the wine grown close to the city was of a more dilute character due to irrigation, while the best Shirazi wines were actually grown in terraced vineyards around the village of Khoullar.

These wines were white and existed in two different styles: dry wines for drinking young, and sweet wines meant for aging. The latter wines were compared to "an old sherry" (one of the most prized European wines of the day), and at five years of age were said to have a fine bouquet and nutty flavour.

The dry white Shirazi wines (but not the sweet ones) were fermented with significant stem contact, which should have made these wines rather phenolic, i.e., rich in tannins. It is likely that Shirazi wines of older times were dried grape wines.

While travellers have described the wines, there seem to be no ampelographic descriptions of the vines or grapes, so it is not known with certainty which grape varieties that were used to produce Shirazi wine, only that white varieties were used.

Marco Polo made mention of the wine, and other classical accounts describe vines trained by pulleys and weights to grow up one side of a house and down another.

The British poet Edward FitzGerald translated Rubaiyat of Omar Khayyam where praise is heaped on the Shirazi wines. Because of present-day Islamic rule in modern Iran, no Shirazi wine is produced today. The vineyards of Iran are instead used for the production of table grapes and raisins.

Shirazi wine or the city of Shiraz has no connection with the modern-day red grape variety "Shiraz", a synonym used in Australia and some other countries for the grape variety Syrah, which originates from northern Rhône valley in France.

Lagrein

Lagrein is a red wine grape variety native to the valleys of northern Italy in the Trentino-Alto Adige/Südtirol region, north of Bolzano, near the border with Austria. Along with Marzemino, it is a descendant of Teroldego, and related to Syrah, Pinot noir and Dureza.

The name suggests its origins lie in the Lagarina valley of Trentino. It was mentioned as early as in the 17th century, in records of the Muri Benedictine monastery near Bolzano.

Cultivation of Lagrein in Alto Adige usually results in the tannic red wines Lagrein Scuro, or Lagrein Dunkel, or the fragrant rosé wines Lagrein Rosato, or Lagrein Kretzer.

In recent years, winemaking techniques have changed, with shortened maceration periods and used oak to achieve less aggressive flavours.

Outside Italy’s Alto Aldige region, the variety is rare to the point of obscurity. In Australia it is limited to some 15 producers, mostly in the cooler parts of the south-eastern states, although most are still at the trial-block stage and are yet to release wines labelled as Lagrein or as Lagrein blends.

There are some plantings of the vine in California as well, mostly in small vineyards or blocks; almost all this production goes to blending. There is an additional production vineyard in the Umpqua AVA (Oregon) which has five acres planted

Lagrein was pioneered in Australia by Dr. Peter May of Melbourne University’s Burnley Campus who discovered a couple of vines in the "vine library" of the Australian Government research organisation (CSIRO) at Merbein in northeast Victoria, and in part influenced by research by Drs Richard Smart and Peter Dry, planted the variety in his garden-sized vineyard at Kyneton in 1988. He later provided cuttings and advice to a number of Victorian producers.

Producers in South Australia have propagated cuttings from mother vines grown in the South Australian Government facility at Nuriootpa, and it is possible that these are a different cultivar from that grown by Peter May in Victoria.

From the small number of producers and the descriptions of plantings available on their respective websites, the total area of Lagrein cultivated in Australia is likely to be less than 50 hectares (120 acres), compared with approximately 43,000 hectares (110,000 acres) of Shiraz/Syrah.

The variety is ferociously vigorous, with drooping canes and a tendency to grow lateral shoots, making canopy management a key issue in cooler areas.

It is a generous yielding variety, so overcropping can also be a problem. In the Peter May/Victoria cultivar at least, the variety is deeply coloured, tannic and has very good acidity at ripeness. Unusually, even the free run juice is tannic.

Lagrein produces wine which has high acidity and low pH, and is also highly tannic, which is why blending with less tannic varietals works so well. As a single varietal wine, Lagrein can be extremely astringent.

To manage this, winemakers give the wine long periods of barrel maturation (>18 months) or for younger fresher wines, pre-fine the juice to remove tannins before fermentation. Lagrein produces a very deep yet intense red color in wine, with notable hues of purple which can be seen especially in the macerated juice.

The variety typically shows a rich berry-fruit mid palate, savoury tobacco/leather/mushroom notes and some sour cherry astringency on the finish.

Nebbiolo

Nebbiolo (Italian), or Nebieul (Piedmontese) is a red Italian wine grape variety predominately associated with the Piedmont region where it makes the Denominazione di Origine Controllata e Garantita (DOCG) wines of Barolo, Barbaresco, Gattinara and Ghemme.

Nebbiolo is thought to derive its name from the Piedmontese word nebbia which means "fog." During harvest, which generally takes place late in October, a deep, intense fog sets into the Langhe region where many Nebbiolo vineyards are located.

Alternative explanations refers to the fog-like milky veil that forms over the berries as they reach maturity or that perhaps the name is derived instead from the Italian word nobile, meaning noble.

Nebbiolo produces lightly colored red wines can be highly tannic in youth with scents of tar and roses. As they age, the wines take on a characteristic brick-orange hue at the rim of the glass and mature to reveal other aromas and flavors such as violets, tar, wild herbs, cherries, raspberries, truffles, tobacco, and prunes. Nebbiolo wines can require years of aging to balance the tannins with other characteristics.

In the most notable expression of Nebbiolo, the wines of Barolo, there is division between what is considered a "traditional" approach to Nebbiolo and a "modernist" approach. The roots of both style can trace its history to the early "pre-technology" production of Nebbiolo.

Prior to the advent of temperature control fermentation, the late harvest dates for Nebbiolo meant that the wines were begun fermentation when the weather turned cold.

These cool temperatures would delay fermentation for several days, extending the maceration period and extraction of phenolic compounds such as tannins. When fermentation did begin, temperatures would reach excessive levels of 95-100 °F (35-38 °C) which would drastically reduce potential aromas and flavors.

With the high levels of tannins, these early Barolos would require five years or more aging in oak barrels to soften some of the astringency. Lack of understanding of proper hygiene lead to less sanitary condition than what both traditional and modernist producers maintain today.

Those conditions lead to the development of bacterial infection of cement fermentation tanks and old wood barrels that contributed to the development of off flavors and potential wine faults that would require at least 24 hours decanting to alleviate.

Vin Santo

Vin Santo or Vino Santo (holy wine) is a style of Italian dessert wine. Traditional in Tuscany, these wines are often made from white grape varieties such as Trebbiano and Malvasia, though Sangiovese may be used to produce a rosé style known as Occhio di Pernice or eye of the partridge.

The wines may accurately be described as straw wines since they are most often produced by drying the freshly harvested grapes on straw mats in a warm and well ventilated area of the house.

Though technically a dessert wine, the wines can vary in sweetness levels from bone dry (like a Fino Sherry) to extremely sweet.

While the style is believed to have originated in Tuscany, examples of Vin Santo can be found throughout Italy and is an authorized style of wine for several Denominazione di origine controllata (DOCs) and Indicazione geografica tipica (IGTs).

The styles, color, sweetness and quality of Vin Santo can vary widely depending on the grape varieties and production methods used to make the wine.

While white grapes, such as Trebbiano and Malvasia in Tuscany, are most widely used, red grape varieties (such as Sangiovese) can be used to produce a rosé style wine.

When red grape varieties are used, the wine is often labeled as a Occhio di Pernice or "eye of the partridge," which has its own DOC classification in several regions of Italy.

The wines can be made to fit any style of sweetness levels from bone dry, almost Fino Sherry-like, to extremely sweet and on par with the botrytized wines of France and Germany.

The wines can even be fortified with grape spirit like Port added during fermentation. These fortified examples are usually labelled as Vin Santo Liquoroso.

The color of wine Vin Santo can range from a pale to dark amber to even neon orange. The flavors typical of Vin Santo often include nutty or raisin notes with honey and cream attributes.

In Italy it is traditional to serve the wine as a digestif at the end of the meal after espresso. It is often served with biscotti cookies that may be dunked into the wine.

Rum

Rum is a distilled alcoholic beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak and other barrels.

The majority of the world's rum production occurs in and around the Caribbean and in several Central American and South American countries, such as Dominican Republic, Guatemala, Colombia, Venezuela, Jamaica, Guyana, Puerto Rico, Brazil, and Cuba.

Bourbon whiskey

Scotch whisky is whisky made in Scotland. In Britain, the term whisky is usually taken to mean Scotch unless otherwise specified. In other English-speaking countries, it is often referred to as "Scotch".

Scotch whisky is divided into five distinct categories: Single malt Scotch whisky, blended malt (formerly called "vatted malt" or "pure malt"), blended Scotch whisky, blended grain Scotch whisky, and single grain Scotch whisky.

The first written mention of Scotch whisky is in the Exchequer Rolls of Scotland, 1495. A Friar named John Cor was the distiller.

The typical grain mixture for bourbon, known as the mash bill, is 70% corn with the remainder being wheat and/or rye, and malted barley.

The grain is ground, dissolved in water, and usually, though not always, mash from a previous distillation is added to ensure a consistent pH across batches. Finally, yeast is added and the mash is fermented. The fermented mash is then distilled to (typically) between 65% and 80% alcohol.

This clear spirit is placed in charred oak barrels for aging, during which it gains color and flavor from the wood. Changes to the spirit also occur due to evaporation and chemical processes such as oxidation.

Bourbons gain more color and flavor the longer they age. Maturity, not a particular age, is the goal. Bourbon can age too long and become woody and unbalanced.

After aging, bourbon is withdrawn from the barrel, usually diluted with water and bottled to at least 80 US proof (40% abv). Most bourbon whiskey is sold at 80 US proof. Other common proofs are 86, 90, 94, 100 and 107, and whiskeys of up to 151 proof have been sold.

Some higher proof bottlings are "barrel proof," meaning that they have not been diluted after removal from the barrels. Bourbon whiskey may be sold at less than 80 proof but must be labeled as "diluted bourbon."

Stolichnaya

Stolichnaya (Russian: Столичная, ISO 9: Stoličnaâ, also known as Stoli) is a Russian vodka made of wheat and rye grain.

Fermentation of Stolichnaya starts with wheat and rye grains and artesial water from the Russian city of Samara and the Kaliningrad region.

The fermentation takes about 60 hours. Once fermentation is complete the resulting liquid is distilled four times to a strength of 96.4% ABV.

The brand's logo features the words "Stolichnaya vodka" in gold cursive script, over a drawing of a Moscow landmark currently under re-construction, the Hotel Moskva, where Stalin once stayed and the site of one of the first Metro stations in the capital city. ("Stolichnaya" is the adjectival form of "stolitsa" ["столица"], meaning "capital city".)

Stolichnaya has its origins in the Moscow State Wine Warehouse No. 1 which was opened in 1901 by the authorities to ensure higher quality vodka production. Since 2001, Stolichnaya trademark has been an object of a dispute between the SPI Group and the government of Russia.

In 1972, the PepsiCo company struck a barter agreement with the then government of the Soviet Union, in which PepsiCo was granted exportation and Western marketing rights to Stolichnaya vodka in exchange for importation and Soviet marketing of Pepsi-Cola. This exchange led to Pepsi-Cola being the first foreign product sanctioned for sale in the U.S.S.R.

After the breakup of the Soviet Union Stolichnaya vodka continued to be produced for export in several of the ex-Soviet republics, including Ukraine.The bottles retained their Soviet-era labels.

In August 1991, the Soviet patent office revoked the Soviet agency's right to use the Stolichnaya name in Russia. This led to numerous lawsuits, including what companies could market vodka under this name in the United States.

On November 20, 1992, a federal judge ruled that PepsiCo would maintain the exclusive right to the name in the United States, as allowing others to market under the name would bring a "risk of irreparable harm" to the trademark.

In 2002, a Moscow court ruled that Russia would get back the rights to the Stolichnaya brand name from Soyuzplodimport (SPI). In 2009, William Grant & Sons USA signed an agreement to distribute Stolichnaya in the USA.

Vodka

Vodka (Polish: wódka, Russian: водка, Czech: vodka, Slovak: vodka) is a distilled beverage. Vodka, one of the world's most popular liquors, is composed solely of water and ethanol with possible traces of impurities and flavorings.

Vodka is made from any one of these fermented substances: grain, rye, wheat, potatoes, grapes, rice, or sugar beet molasses.

Vodka’s alcoholic content usually ranges between 35 to 50 percent by volume; the standard Russian, Lithuanian, and Polish vodkas are 40 percent alcohol by volume (80 proof).

Historically, this alcoholic-proof standard derives from the Russian vodka quality standards established by Tsar Alexander III in 1894.

The Muscovite Vodka Museum reports that chemist Dmitri Mendeleev determined the ideal alcohol content as 38 percent; however, because in that time distilled spirits were taxed per their alcoholic strength, that percentage was rounded upwards to 40 percent for simplified taxation calculations.

For such a liquor to be denominated “vodka,” governments establish a minimal alcohol content; the European Union established 37.5 percent alcohol by volume as the minimal alcohol content for European vodka.

Vodka is traditionally drunk neat in the vodka belt — Eastern Europe and Nordic countries — and elsewhere.

It is also commonly used in cocktails and mixed drinks, such as the bloody Mary, the screwdriver, the sex on the beach, the White Russian, the vodka tonic, and the vodka martini.

Tequila

Tequila (Spanish pronunciation: [teˈkila]) is a Blue Agave-based spirit made primarily in the area surrounding the city of Tequila, 65 kilometres (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the western Mexican state of Jalisco.

The red volcanic soil in the surrounding region is particularly well suited to the growing of the blue agave, and more than 300 million of the plants are harvested there each year.

Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas.
Mexico has claimed the exclusive international right to the word "tequila", threatening legal actions against manufacturers in other countries.

After one such dispute, agave beverage producer, JB Wagoner, backed away from using even a similar name ('Temequila' since the company is in Temecula), now simply calling his product "JB Wagoner's Ultra Premium". The product is the same.

Tequila is most often made at a 38–40% alcohol content (76–80 proof), but can be produced between 35–55% alcohol content (70–110 proof).

Though most tequilas are 80 proof, many distillers will distill to 100 proof and then dilute it with water to reduce its harshness. Some of the more well respected brands distill the alcohol to 80 proof without using additional water as a diluter.

Sherry

Sherry is a fortified wine made from white grapes that are grown near the town of Jerez, Spain. In Spanish, it is called vino de Jerez.

The word "sherry" is an anglicization of Jerez. In earlier times, sherry was known as sack (from the Spanish saca, meaning "a removal from the solera").

"Sherry" is a protected designation of origin; therefore, all wine labeled as "sherry" must legally come from the Sherry Triangle, which is an area in the province of Cádiz between Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María.

In 1933 the Jerez Denominación de Origen was the first Spanish denominación to be officially recognized in this way, officially named D.O. Jerez-Xeres-Sherry and sharing the same governing council as D.O. Manzanilla Sanlúcar de Barrameda.

After fermentation is complete, sherry is fortified with brandy. Because the fortification takes place after fermentation, most sherries are initially dry, with any sweetness being added later.

In contrast, port wine (for example) is fortified halfway through its fermentation, which stops the process so that not all of the sugar is turned into alcohol.

Sherry is produced in a variety of styles, ranging from dry, light versions such as finos to darker and heavier versions known as olorosos, all made from the Palomino grape.

Sweet dessert wines are also made, from Pedro Ximenez or Moscatel grapes. Sherry is regarded by many wine writers as "underappreciated" and a "neglected wine treasure".

Madeira wine

Madeira is a fortified Portuguese wine made in the Madeira Islands. The wine is produced in a variety of styles ranging from dry wines which can be consumed on their own as an aperitif, to sweet wines more usually consumed with dessert.

Cheaper versions are often flavored with salt and pepper for use in cooking. The islands of Madeira have a long winemaking history dating back to the Age of Exploration when Madeira was a standard port of call for ships heading to the New World or East Indies.

To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavor of the wine as the wine producers of Madeira found out when an unsold shipment of wine returned to the islands after a round trip.

Today, Madeira is noted for its unique winemaking process which involves heating the wine up to temperatures as high as 60°C (140°F) for an extended period of time and deliberately exposing the wine to some levels of oxidation.

Due to this unique process, Madeira is a very robust wine that can be quite long lived even after being opened. Most countries limit the use of the term Madeira or Madère to only those wines that come from the Madeira Islands.

In Europe, this principle is enshrined in the European Union by Protected Designation of Origin (PDO) status.

Port wine

Port wine (also known as Vinho do Porto, Porto, and often simply Port) is a Portuguese style of fortified wine originating from the Douro Valley in the northern provinces of Portugal.

It is typically a sweet, red wine, often served as a dessert wine, and comes in dry, semi-dry, and white varieties.

Fortified wines in the style of port are also produced outside of Portugal, most notably in Australia, South Africa, Canada, India, Argentina, and the United States. Under European Union Protected Designation of Origin guidelines, only the product from Portugal may be labelled as Port or Porto.

Elsewhere, the situation is more complicated: wines labelled "Port" may come from anywhere in the world, while the names "Dão", "Oporto", "Porto", and "Vinho do Porto" have been recognized as foreign, non-generic names for wines originating in Portugal.

Port is produced from grapes grown and processed in the demarcated Douro region. The wine produced is then fortified by the addition of a neutral grape spirit known as aguardente in order to stop the fermentation, leaving residual sugar in the wine, and to boost the alcohol content.

The fortification spirit is sometimes referred to as Brandy but it bears little resemblance to commercial Brandies.

The wine is then stored and aged, often in barrels stored in a cave (pronounced "ka-ve" and meaning "cellar" in Portuguese) as is the case in Vila Nova de Gaia, before being bottled.

The wine received its name, "Port", in the latter half of the 17th century from the seaport city of Porto at the mouth of the Douro River, where much of the product was brought to market or for export to other countries in Europe.

The Douro valley where Port wine is produced was defined and established as a protected region, or appellation in 1756 — making it the third oldest defined and protected wine region in the world after Chianti (1716) and Tokaji (1730).

Vermouth

Vermouth (pronounced ver-mooth /vərˈmuːθ/) is a fortified wine, flavored with aromatic herbs and spices ("aromatized" in the trade) such as cardamom, cinnamon, marjoram and chamomile. Some vermouth is sweetened; unsweetened, or "dry" vermouth tends to be bitter.

The person credited with inventing the vermouth recipe, Antonio Benedetto Carpano from Turin, Italy, chose to name his concoction "vermouth" in 1786 because he was inspired by a German wine flavoured with wormwood, a herb most famously used in distilling absinthe.

The modern German word Wermut (Wermuth in the spelling of Carpano's time) means both wormwood and vermouth.

The herbs in vermouth were originally used to mask raw flavours of cheaper wines, imparting a slightly medicinal "tonic" flavour.

Vermouth is used in many cocktails, where it serves as a moderating agent to reduce the percentage of alcohol by volume in the drink and provide a herbal flavor.

In his book The Joy of Mixology, Gary Regan categorizes these drinks as "French-Italian cocktails" because dry vermouth was traditionally referred to as French vermouth and sweet vermouth was traditionally referred to as Italian vermouth. The most well-known cocktails containing vermouth are the Martini and the Manhattan.

Barley wine

Barley wine or Barleywine is a beer style of strong ale originating in England. The first beer to be marketed as Barley Wine was Bass No. 1 Ale, around 1900.

The term "barley wine" had been used before in other contexts, for example in translations of Xenophon's Anabasis (although it may have referred to regular grape wine with cooked barley in it).

A barley wine typically reaches an alcohol strength of 8 to 12% by volume and is brewed from specific gravities as high as 1.120.

It is called a barley wine because it can be as strong as wine; but since it is made from grain rather than fruit, it is, in fact, a beer.

Most barley wines range in colour from amber to deep reddish-browns, though until the introduction of Whitbread Gold Label in the 1950s, British barley wines were always dark in colour. All are rich and full-flavored.

Writer Michael Jackson referred to a barley wine by Smithwick's thus: "This is very distinctive, with an earthy hoppiness, a wineyness, lots of fruit and toffee flavours." He also noted that its original gravity is 1.062.

According to Martyn Cornell, "no historically meaningful difference exists between barley wines and old ales."
